Buttermilk Panna Cotta with Fresh Strawberries

Looking for a refreshing summer dessert but don’t want to heat up the house with the oven? We’ve got just the one for you! Panna Cotta might sound fancy but trust us, it’s super easy and looks impressive when it’s done. It’s also DELICIOUS. The tangy buttermilk flavor and silky smooth texture pair perfectly with fresh summer strawberries. You’ll definitely want to give this one a try.

Ingredients

Fresh strawberries; some sliced, some mashed
Fresh mint to garnish (optional)

2 tablespoons water
1 1/2 teaspoons unflavored gelatin
Nonstick vegetable oil spray
1 cup whipping cream
1/2 cup sugar
2 cups buttermilk
2 teaspoons vanilla extract

Instructions

  1. Pour 2 tablespoons water into a small bowl and sprinkle the gelatin over the top. Let stand until gelatin softens or “blooms,” about 10 minutes.

  2. Lightly spray six 3/4 cup ramekins or custard cups with non-stick spray.

  3. Heat whipping cream and sugar in a medium saucepan over medium heat, stirring constantly until sugar dissolves. Slightly increase heat and bring just to a low boil.

  4. Add gelatin mixture and remove from heat. Stir until gelatin dissolves. Cool mixture until it is lukewarm, stirring often.

  5. Stir in buttermilk and vanilla extract, divide evenly among prepared ramekins or custard cups.

  6. Refrigerate until set, about 4 hours. Can be made two days ahead; be sure to cover it and keep it chilled.

  7. Run a small, sharp knife around the edge of each panna cotta and invert the ramekins or custard cups onto a plate. Allow the panna cotta to drop out of the container and settle onto the plate.

  8. Top with some mashed berries and juice + some sliced strawberries. Garnish with mint and serve. Enjoy!!
