Blueberry mojitos
The perfect drink for a hot July evening! These are delicious and refreshing - a great way to use your fresh picked blueberries. We made these with homemade blueberry simple syrup to get a bold blueberry flavor and a beautiful purple color. Feel free to leave out the alcohol for a yummy mocktail!
blueberry simple syrup
Ingredients
1 cup granulated sugar
1 cup water
1 cup blueberries
Instructions
Add all ingredients to a medium sauce pan. Bring to a boil over medium-high heat, stirring occasionally.
Reduce heat to medium low, simmer for five minutes.
Strain into a bowl through a fine mesh sieve. Let cool completely. Store in the refrigerator and use within one week.
Blueberry Mojitos
Ingredients
(Makes one mojito)
5-7 fresh mint leaves
1 lime wedge
1 1/2 fluid ounces blueberry simple syrup, or to taste (recipe above)
1 1/2 fluid ounces white rum
Club soda
Ice cubes
Instructions
Add mint leaves, lime wedge, and simple syrup to a sturdy glass and use a muddler to crush mint leaves and lime.
Fill the glass nearly to the top with ice, pour in rum, and top with club soda. Stir gently. Garnish with a couple of extra mint leaves if desired.
Tips:
Leave out the rum for a delicious mocktail!
Top with a few frozen blueberries for a refreshing garnish.
