Strawberry Snack Cake

A super simple and delicious cake for when you’re craving something sweet.

Ingredients

1 stick of unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 1/3 cup flour
1 1/4 tsp baking powder
1/4 tsp salt
1/2 cup sour cream
~1 pound strawberries, sliced into small pieces

Instructions

Preheat oven to 350° F. Spray a 9 inch cake pan with cooking spray.

In a large bowl, beat together butter and sugar until light and fluffy. This should take 5 to 7 minutes.

Add eggs one at a time, beat well after each addition. Beat in vanilla extract.

In a separate bowl, mix together flour, baking powder, and salt.

Gradually add flour mixture to butter mixture, alternating with sour cream. Beat until just combined after each addition.

Gently fold in strawberries. Spread batter in greased cake pan. Sprinkle a little extra sugar over the top just before putting in the oven - this will create a sweet, crunchy crust.

Bake 35-45 minutes until light golden brown on top and a toothpick inserted in the center comes out clean.

Let cool; slice and serve directly from the pan!
